Michelin 2 and 3-star restaurants in Oslo (2026)

Two restaurants qualify: Maaemo (3*) in Bjørvika and Kontrast (2*) in Vulkan. Both Nordic, both Green Star — they differ in scale, price, and how far ahead you must book.

Decision. Oslo has exactly two restaurants in scope: Maaemo (3★) and Kontrast (2★). Both are Nordic, both hold a Michelin Green Star. Anchor the weekend on Maaemo if you can win the 1st-of-the-month reservation lottery two months out [7] and the ~NOK 4,500 / 20+ course commitment is desirable [9]. Otherwise Kontrast at NOK 2,300 is a strong Plan A in its own right, with materially easier availability [16].

Maaemo — three stars, Bjørvika

Norway’s only 3-star restaurant [2], and the first restaurant in the Nordics ever to reach 2 stars on its first rating (March 2012) [3]. The third star came in February 2016; the team closed the original Grønland location in December 2019 to relocate to a much larger Bjørvika site near the Opera House, lost all three stars in the 2020 guide, and reclaimed all three in September 2021 [3]. Chef-owner Esben Holmboe Bang is Danish-Norwegian and one of the canonical New Nordic figures [4].

The format is a set 20+ course tasting menu, ~NOK 4,500, dinner only Tue–Sat 18:00–24:00 [9] [18]. Every ingredient is Norwegian, seasonal, organic / biodynamic / wild — explicitly mapped to its source for the guest [10]. The room is described by The World’s 50 Best Discovery as “strikingly minimalist, industrial setting close to Oslo’s old dock” [17]. Expect a 3–4 hour evening.

Booking is the bottleneck. Maaemo releases tables via Tock [6] on the 1st of each month at 12:00 CET, opening dates ~2 months out [7]. A weekend in, e.g., late July → set an alarm for 1 June 12:00 CET. Have a backup weekend in case the slot you want is gone within minutes.

Kontrast — two stars, Vulkan

Opened 2013, first star 2016, promoted to two stars in 2024 alongside a Michelin Green Star the same year [15] [11]. Chef-owner Mikael Svensson is Swedish (Skåne); in 2020 he co-founded b.culture to upcycle Kontrast’s byproducts via fermentation — the sustainability story is operational, not marketing veneer [13]. About 98% of the kitchen’s produce is sourced locally [11].

The room sits in the Vulkan ex-industrial development next to the Akerselva river — stark, minimalist, an “industrial edge”; the food’s signature is “simple presentation [masking] the complex nature of what’s served” [14]. Big Kontrasts tasting NOK 2,300; wine pairing NOK 1,700 (standard), NOK 2,450 (upgraded), or NOK 945 alcohol-free [16]. Booking is direct on Kontrast’s own platform — no monthly drop, much more forgiving [12].

How to choose

  • Want the 3-star landmark dinner, willing to plan the trip around the reservation: Maaemo. Treat the booking as the first thing you lock in; everything else flexes around it.
  • Want a 2-star Nordic tasting at roughly half the price, with a relaxed booking process: Kontrast. Substantially easier to fit into a weekend that’s already on rails.
  • Risk-managed plan: apply for Maaemo on the 1st of the month, but also hold a Kontrast slot for the same weekend you can cancel free if Maaemo comes through. Both restaurants are dinner only and run Tue–Sat, so a Friday or Saturday anchor works for either [18] [14].
