What's new in 2026: Aponiente has abandoned its traditional dining-room format. Guests now physically walk the salt marshes of Cádiz Bay — eating where ingredients are harvested, with a traditional harvester present — before concluding in the historic tide mill.[2]
Highlights: halófitas & sea urchin in the estero, moray eel, roe flan finale. One of 16 restaurants in Spain to hold three Michelin stars.[1]
