Decision: Taichung has exactly one restaurant with 2+ Michelin stars — JL Studio (3 stars). There are no 2-star restaurants in Taichung; all seven of Taiwan's 2-star establishments are in Taipei.[1] Book JL Studio for the anchor dinner — it's the world's first 3-Michelin-star Singaporean restaurant and ranked No. 50 on Asia's 50 Best 2026.[2]

Founded by Singaporean chef Jimmy Lim Tyan Yaw (son of a zi char hawker stall owner), JL Studio earned its third Michelin star in August 2023 — making it the world's first three-Michelin-starred Singaporean restaurant.[3] Stars retained in 2024 and 2025.[4] The kitchen reinterprets Singaporean hawker classics — chicken rice, chilli crab, satay, kaya toast, laksa — through French technique and premium Taiwanese ingredients, maintaining every dish's cultural signal while transforming its physical form.[5]

  • Hainanese chicken rice — seasonal Taiwanese fish poached in aromatic broth substitutes the chicken, retaining the texture and deepening flavour[2]
  • Kaya toast — served in an edible frozen-kaya shell, with coconut ice cream and salted butter foam
  • Fermented banana curry with tiger prawn
  • Rasam-inspired soup; Indonesian gado gado; satay → foie gras ice cream with peanut sauce[7]

Two-Star Restaurants in Taichung

None. As of the 2025 Michelin Guide Taiwan (released August 2025), all seven 2-star restaurants in Taiwan are located in Taipei — including the three newly promoted restaurants (Yu Kapo, Eika, and A).[1] Taichung's only multi-star restaurant is JL Studio above. The next Michelin Taiwan star ceremony is expected August 2026.
