JL Studio
Founded by Singaporean chef Jimmy Lim Tyan Yaw (son of a zi char hawker stall owner), JL Studio earned its third Michelin star in August 2023 — making it the world's first three-Michelin-starred Singaporean restaurant.[3] Stars retained in 2024 and 2025.[4] The kitchen reinterprets Singaporean hawker classics — chicken rice, chilli crab, satay, kaya toast, laksa — through French technique and premium Taiwanese ingredients, maintaining every dish's cultural signal while transforming its physical form.[5]

Signature dishes
- Hainanese chicken rice — seasonal Taiwanese fish poached in aromatic broth substitutes the chicken, retaining the texture and deepening flavour[2]
- Kaya toast — served in an edible frozen-kaya shell, with coconut ice cream and salted butter foam
- Fermented banana curry with tiger prawn
- Rasam-inspired soup; Indonesian gado gado; satay → foie gras ice cream with peanut sauce[7]
