Beck has held 3 stars here since 1994 — the first and still only 3-star in Rome.[2] A seven-month renovation reopened the restaurant in June 2024 with terracotta-toned interiors by architects Jouin & Manku, state-of-the-art induction kitchens, and a revamped pastry section.[3] The ninth-floor terrace gives panoramic views over the entire city. Wine director Marco Reitano curates a 60,000-bottle cellar with no forced pairings.[3]

Genovese opened Il Pagliaccio in 2003 and earned 2 stars within a few years.[6] Born in Calabria, raised in France, trained across Asia — the cuisine crosses continents: Mediterranean base, French precision, Asian ingredients and techniques.[6] The minimalist dining room in the historic centre balances intimacy with theatrical presentation — menus are named after circus acts.[5]

Daniele Lippi leads a kitchen brigade mostly under 30, producing Mediterranean-rooted dishes built on understandable flavours without pretension.[8] The dining room is dressed in deep blue tones, discreet and elegant. A 1,000-label wine cellar emphasises small producers and natural wines.[8] Two paths: the shorter Periplo is entirely aquatic; the longer Anabasi Catabasi adds land-sourced courses.

Domenico Stile — among Italy's youngest-ever 2-star chefs — trained under Massimo Bottura and Grant Achatz before settling at Villa Laetitia, the art-filled 1911 Liberty-style villa owned by Anna Fendi Venturini.[11] His cuisine channels his Campanian roots enriched by Asian umami and fermentation techniques.[11] The 1,000-bottle wine program — with 150 selections by the glass — won Best Wine Cellar in Italy 2022 from Le Guide de l'Espresso.[10] The Tiber-side terrace adds an outdoor option in warm months.
