Christopher Coutanceau
The defining address for haute cuisine in La Rochelle — and the only restaurant in Charente-Maritime to hold more than one Michelin star.[8] Chef Christopher Coutanceau sources his catches daily from the La Rochelle fish auction and runs a strict zero-waste kitchen, working with underused species alongside the marquee cuts.[2] The dining room overlooks Plage de la Concurrence through floor-to-ceiling bay windows — ocean as backdrop and as the entire menu philosophy.

Signature dishes (2025–26 season): Fine oyster tartare from Maison Gillardeau · Brill confit in seaweed-infused sparkling butter with porcini · Cuttlefish rougail style with Colonnata bacon · Solliès fig dessert.[4]
The sustainability angle: Coutanceau holds a Michelin Green Star for ecological commitment — excluded threatened species, reproductive-period closures respected, all fish parts used, eco-friendly suppliers only.[1] The 2026 Michelin Guide France names this one of 31 three-star establishments in the country.[5]
La Yole de Chris — Coutanceau's bistro
Same beach, same chef's sourcing philosophy, accessible price point. Open daily 9 am–11 pm for anything from a morning coffee to a full seafood dinner.[3] Oysters from €3.50, seafood platters €42–100, full meal around €60 without wine.[3] Awarded a Michelin Green Star for sustainability practices and holds a Michelin Plate (recommended quality).[11] The bistro launched in 2018 as Coutanceau's more casual coastal address.[10]
