The first restaurant in Córdoba's history to reach three Michelin stars,[3] awarded at the November 2023 ceremony.[4] Chef: Paco Morales (head), Paola Gualandi (second-in-command).[5]
Concept: each season traces one century of Al-Andalus history through contemporary technique. Ingredients unavailable in that era are excluded — no potatoes or tomatoes before the 15th century, for example.
