- Fu Yueliang spent four decades reviving Southern Song-dynasty Hangzhou cooking, training under master Dong Shunxiang at the century-old Zhiweiguan. He insists on updating ingredients where tradition used inferior substitutes — grass carp replaced by sweeter marble goby for the West Lake fish, for instance. Co-founder Iris Tan (International Sommelier Association) curates wine pairings.[6]

He preserves the Jiangnan flavor essence while layering in modern technique and premium global ingredients — caviar and abalone sit alongside East China Sea croakers and local Zhejiang produce.[2]
