Chefs Franck Derouet (kitchen) and Thomas Lorival (sommelier & co-director) took over in late 2022 and have held the three stars first awarded in 2019.[2][3] Cuisine is resolutely vegetable & lake-focused — every ingredient comes from their own garden or within 100 km.[4] Lake fish (féra, pike) are treated with the same rigour as meat: aged, fermented, or grilled like a côte de bœuf. The dining room uses burnt wood, Savoyard stone and cut crystal; there is a 100-year-old chestnut terrace. Relais & Châteaux property.[5]

Maison Benoît Vidal ★★

Catalan-born chef Benoît Vidal trained with Michel Trama and Michel Guérard, then settled in Savoie.[7][8] Light, precise plates centred on lake fish — pike, trout, crayfish — with a botanical vocabulary of sorrel, caraway, meadowsweet. Only ~20 covers: the most intimate of the five.

Wine pairing: 5 glasses €110 / 8 glasses €160.[9] Open Wed–Sun lunch, Wed–Sat dinner.

Chef Jean Sulpice's signature alpine haute cuisine — féra and char from the lake, spruce, mountain herbs, Savoyard saffron — served behind panoramic windows over the Bay of Talloires.[10][11] The cellar holds 30,000 bottles across 5,000 labels. Michelin Green Star for sustainability. 5-star Relais & Châteaux hotel.[12]

Breton chef Yoann Conte took over Marc Veyrat's iconic lakeside house in 2010 and earned his first star within a year.[14][15] Two distinct tasting menus: Adopted Land (Alpine terroir) and Native Brittany (seafood from his homeland) — the most idiosyncratic offering in the region. Garden-to-table herbalist approach; 5 Gault & Millau toques (19/20). 5-star R&C property with 11 rooms + 2 suites, all lake-view.

Chef Florian Favario and co-owner Sandrine Deley-Favario opened in 2020, won their first star immediately and a second in 2023.[17][18] Resolutely plant-forward: wildflowers, alpine herbs (thyme, hyssop, agastache), lamb and home-grown vegetables. Mountain-cosy interior with views down to Lake Annecy — the most intimate and geographically dramatic setting of the five. Single fixed menu only; Michelin Green Star for sustainability.[19]
