Chef Supaksorn "Ice" Jongsiri (self-taught, co-founded with Yodkwan U-Pumpruk) revives the culinary traditions of Thailand's 14 southern provinces, almost none of which appear in Bangkok's mainstream dining scene. The kitchen hand-mills curry pastes, ages fish sauce in-house, and cooks rice in clay pots over charcoal. [12] Every ingredient is sourced directly from accountable southern farmers and fishers. Twin brothers Thomas and Mathias Sühring were raised in East Berlin and trained across Europe — Mathias at De Librije (Netherlands) under Jonnie Boer, Thomas at La Pergola (Rome). [14] They opened in a Bangkok villa in 2016, earning 2 stars a year later and holding them for seven consecutive years before reaching 3 in the 2026 Guide. Booking tips

Sorn — 22 seats, two monthly windows. Online spots drop on TableCheck at exactly 12:00 noon Bangkok time on the 25th and sell out in seconds. [5] International guests can email from the 15th of the prior month for reserved international slots. Weeknights are marginally easier than weekends — but Saturday is never available. [15]
Sühring — reservations open up to 60 days ahead via SevenRooms; a waitlist exists for sold-out dates. [6] Aim for 4–6 weeks ahead for a Saturday seat. A strict 48-hour cancellation policy applies — ฿5,800 per person for no-shows or late cancellations. Children aged 6+ are welcome; dietary restrictions (except dairy and egg allergies) can be accommodated. [6]
